A cyclosporiasis outbreak has now affected more than 1,700 people and counting. More than two dozen states are investigating cases of the foodborne parasitic infection. While it’s not fatal, symptoms can include “frequent and sometimes explosive bowel movements,” according to the Centers for Disease Control and Prevention. The source of the outbreak is unknown; the cyclospora cayetanensis parasite can be hard to track as it can’t be reproduced in a lab and it is not always detected through food
