Harvesting a prime nugget of Chicken of the Woods (Laetiporus gilbertsonii in this case). I like to cut polypores with a knife versus ripping them off by hand. This allows the mushroom to continue growing when conditions are again favorable. This is because polypores are indeterminate and can continue growing even after a harvest.
