Grease Trap Cleaning at a Bakery

This here is a grease trap. Prevents any heavy grease from getting into the plumbing and sewerage. It was doing it job. Problem is, it wasn’t suppose to be doing this much work. We basically use this sink just to empty the water from the steam table. That water has grease, food particles, etc. you’re SUPPOSED to use a strainer, that’s in the sink, to prevent most of this from going down the drain.
